About this trip

Kölsch is not just a beer: it's a dialect, an attitude, a way of life. Since the Kölsch-Konvention of 1986, only breweries within a 50 km radius of Cologne are allowed to brew this blonde, light, top-fermented ale — the only German beer with a protected geographical indication, on par with champagne or cognac. Served in a narrow 0.2 l glass called a Stange, brought by a Köbes with a famously sharp tongue who will never ask if you want another one — he'll simply put a fresh glass on your table until you place the coaster on top — Kölsch is the heartbeat of this Rhineland city. With its centuries-old breweries, its emerging craft scene led by Braustelle in Ehrenfeld, and its Brauhäuser where conviviality is not a concept but a ritual, Cologne fully deserves its three hops.

Cologne doesn't sell itself like Berlin or Munich. You don't come here for monuments — you come for a ritual. The ritual of the Stange arriving unasked, of the Köbes eyeing you with gruff affection, of the wooden counter worn smooth by generations of elbows. The Kölsch-Konvention made this the only city in the world whose beer holds a protected appellation, and that pride runs through every Brauhaus. But Cologne also knows how to look forward: Braustelle in Ehrenfeld has proved since 2001 that you can be a rebel and respect tradition. Visit between May and October for the Biergärten, or in February if you want to live through Karneval — but give your liver fair warning.

    Europe's most straightforward waiter

    Watch a Köbes glide through the Brauhaus carrying his Kranz — a wreath loaded with 12 Stangen — dodging tables, chairs and conversations. He will never ask if you want another one. He will simply set it down. Period.

    Deckel drauf!

    The only password to stop the flow

    Learn the most important gesture in Cologne: placing your coaster on top of the empty glass to signal to the Köbes that you're done. Without this move, the Kölsch will keep arriving. Forever.

    Drink a Kölsch poured straight from an oak cask sitting on the counter, no artificial carbonation, no filter, no compromise. Kölsch as it was in 1883. Nothing else comes close.

    Order an Ehrenfelder Alt at Braustelle — an Altbier brewed in the heart of Cologne by a brewmaster from Düsseldorf. In 2001, the Express tabloid refused to cover it. Today it's a classic.
